Ingredient
Chicken Breast -2 large pcs
Carrot -3 pcs
onion -1 big or 2 small
Garlic peeled -5pcs chopped
Spring onion- 3 pcs cut in small
Choisum saag-1 bunch cut in small
Beansprouts- 100g (substitute with cabbage if you like)
Coriander-for garnish
Cajun Spice - 2-3 Tbsp for marinating the chicken (or use any marination if not available)
Kikoman light soy sauce- 3Tbsp
Maggi chili sauce -3-4 Tbsp
Salt - To taste
Pepper -To Taste
Sesame oil -1 tsp (optional)
Sesame seed (optional)
Method
-Cut the chicken into small strips and marinade with Cajun spice( or any marination if not available ) for 15-30 min in oil.
-Cook the chicken in a pan in small batches and keep aside.
-cook the egg noodles in boiling water, season with salt for 4-5 min, drain and rinse in cold water to avoid overcooking, and drizzle with oil.
-place the pan on the stove, put oil and sauté the chopped garlic until it turns light brown
-Add the sliced onion and cook until light brown.
-Add the carrots and cook for a few minutes.
-lastly, add the choisum saag & Beansprouts to it and cook for a minute.
-Add in soy sauce, chilli sauce, salt, pepper & Cajun spice and stir for a while.
-Add in the cooked noodles, mix it gently and toss. don’t touch too much as it might break the noodles & make it mushy.
-Check the seasoning, then start plating.
-I’m using a flat round plate. Put the noodles, and top up with cooked chicken, garnish with coriander, toasted sesame seed & serve with a slice of lemon.
